Looking for a chocolatey, chewy, cookie bar?! Well these may do the trick!
These cookie bars practically melt in your mouth. Rich, indulgent, and full of chocolate chips & chunks.
Grab a tall glass of milk because these bars were made for dunking. A thick, chewy, moist, chocolate chip cookie in a bar form…with some malted milk powder added in the mix for extra flavor.
This recipe is similar to my chocolate chip butterscotch blondies. Same delicious brown sugar flavored base with the addition of malted milk powder. The malted milk powder adds undeniable richness and softness to these cookie bars. And, instead of a chocolate chip butterscotch combination…we’re adding in chocolate chips and chocolate chunks. That’s right, there’s no shortage of chewy chocolatey goodness with this recipe. It’s just to good for words.
This recipe idea actually happened by accident. I was trying to create a thick, moist, malted chocolate chip cookie but was unsuccessful. My malted cookie creations fell flat like pancakes…and good pancakes aren’t even suppose to be that flat. Then the idea struck me…why not make a malted flavor blondie, except…it’s not going to be a blondie because it’s going to taste like a chocolate chip cookie. Genius right?!
I’ll be completely honest with you, even with the 1/2 cup of malted milk powder used in the recipe these bars don’t smack you with malted milk flavor…but it’s there. The richness, the softness, the chewiness…it’s all possible because of the addition of malted milk powder. You gotta try them for yourself!
One thing I would like to touch on about this recipe is how thick the batter gets. Once you’ve mixed your wet ingredients together and start incorporating the dry ingredients into the wet ingredients you’ll really see the dough thicken up. It’ll almost seem too hard to mix/stir but work with it. Also, it’s not a huge amount of dough either. So with the addition of the chocolate chips and chunks it may seem like too much for the dough but it’s not. I promise. This isn’t a case where I’ve totally overloaded the dough with too many mix-ins. The super thick dough and the addition of chocolate chips and chunks is going to result is one the the best cookie bars you’ve ever eaten!
