These loaded cookie bars have everything you want; double stuffed Oreo’s, mini m&ms, chocolate chip cookie dough, lots of ooey gooeyness, totally milk dunk-able… am I missing anything? My point – they’re pretty awesome and they are sssssoooooo simple to make.
This is not a made-from-scratch kinda sweet treat. It’s everything prepackaged, store bought and totally convenient. Made from scratch is always awesome but sometimes you just want to throw a bunch of stuff together, all easy peasy, pop it in the oven, wait for it to cool and attack. This my friends, is that kind of assemble.
My sister and I used to make these bars all the time growing up, we called them m&m cookie bars. Clever, I know hehe. Well now that I’m an adult, or sort of, I wanted to take them up a notch slightly. And if you’ve read anything from this blog before you’ve probably heard me mention my unfailing loved of baked Oreo’s. Oreo’s baked into brownies, cookies, cupcakes, whatever – a baked Oreo cookie is something to be celebrated.
Aside from the Oreo, chocolate chips and candy pieces make the best cookie bar accessories. For this batch I was hooked on mini m&ms. And even though store bought cookie mix already comes with chocolate chips, I always like to add in about a 1/3 cup more.
To get that killer Oreo cookie bottom that you see in the photos – it’s all in the layering. Layer the bottom of your baking dish with parchment paper. Then make your layer of Oreo’s. For this particular batch I used double stuff but any variety would be awesome. You may find that when you get to the sides and corners of the pan a full cookie won’t fit, in that case just break up the cookie and use the smaller peices to fill in the gaps. Once you’ve made your cookie dough, plop (yes plop) it right on top of the Oreo’s. Use a spatula to spread the cookie dough over the entire pan. This takes patience because the dough is very thick. I use a rubber spatula for the first 2 or 3 minutes to spread the dough a little bit but then I switch to using my hands. Using your hands is definitely the stickier way to go, but it’s also way easier. Press down the cookie dough using work palms so that it covers the entire pan. Use your fingers to push the dough down the corners and sides of the pan so everything bakes together.
- 1 standard package double stuffed Oreo's (or whichever kind you like)
- 1 package chocolate chip cookie mix (I used Betty Crocker)
- 1 stick of butter (softened - for cookie mix)
- 1 large egg (for cookie mix)
- 1/3 cup semi sweet chocolate chips
- 1/2 cup mini m&ms
- preheat oven to 375 degrees. Line an 8x8 inch or 9x9 inch baking dish with parchment paper and leave enough overhang for the sides. Line the bottom of the baking dish with Oreo's until you have a complete bottom layer. You make have to break some of the cookies in half to get them to fit in the corners and on the sides. Set baking dish aside.
- Make cookie dough according to package instructions. Once the cookie dough is made add in the additional 1/3 cup of chocolate chips and mini m&ms, mixing completely until thoroughly combined.
- Plop (yes, plop) the cookie dough onto the layer of Oreo's in the baking dish. Using a spatula or the back of a large spoon try to spread out the cookie dough over the entire dish. The dough will be thick so this will take some patience and a few minutes. It may be easier to use the palms of your hands to flatten and spread the cookie dough over the Oreo's. Use your fingers to push the cookie dough in the corners and sides of the pan to make sure it covers the Oreo's.
- Bake for 20-25 minutes, once the sides are golden brown. Be sure not to over bake, the top of the bars may not seem done but they will set while they cool.
- Allow bars to cool for at least 30-45 minutes before serving. When ready to serve just lift up the overhang of parchment paper and set the bars on a hard surface to cut.
