Winner Winner Chicken Dinner!
This recipe is more about the sauce then the actual chicken, but it’s delicious none the less. Delicious and easy to put together.
Thick, creamy, full of amazing flavor from sun dried tomatoes and fresh basil. I threw in a few pinches of red pepper flakes for a tiny bit a heat.
MMMMMmmmmmmm! Bon Appetit!
The original recipe serves it over chicken, but I bet it would also be good over pasta too!
This entree can be pulled together in about half hour. Breading and cooking the chicken take about 15 – 20 minutes, and the sauce comes together in about 10 minutes.
Like I said before, the sauce if the focal point. Once your done cooking the chicken, set it on a plate and cover to keep it warm. Do not remove the skillet from medium heat. Throw in your garlic and stir it around for about 30 seconds, just to prevent it from burning. Add in your chicken broth and let it come to a boil, which will happen in a matter of a few minutes because we kept the skillet hot. Stir the garlic and broth around, focusing on breaking up the browned bits from the bottom of the skillet…this is where we’ll get some of our flavor from!
Now add in the heavy cream and sun dried tomatoes. Stir everything together, again, allowing it to come to a boil. Let this mixture boil for about a minute or so, stirring so nothing sticks to the skillet. Reduce the heat to low and add in the fresh basil and Parmesan cheese. I substituted red pepper flakes for the black pepper , gives it a little kick! At this point all the hard work is done and now you just want to cook the sauce a little longer (about 5 minutes) so it’ll thicken up. If you like your sauce thinner than you can skip the extra 5 minutes.
Once the sauce is done remove it from the stove top and pour it over the chicken breasts. And guess what…dinner is done!
Chances are you won’t have any leftovers…
