CHOCOLATE MARSHMALLOW PEPPERMINT ROLL

A delightful chocolate-peppermint cake roll with marshmallow frosting. There's peppermint flavor in the cake and the chocolate ganache so this dessert is ideal for chocolate peppermint lovers!

–all purpose flour – unsweetened cocoa powder – coffee granules – baking powder – unsalted butter – granulated sugar – egg – peppermint extract – powdered sugar – marshmallow fluff – salt – heavy cream – dark chocolate chip

Ingredients

Step 1

Preheat oven to 350 degrees. Lightly spray and line a 10x12 jelly roll pan, set aside. Combine flour, cocoa powder, instant coffee granules, baking powder and salt into a bowl.

Give the ingredients a quick whisk to break up any clumps. Set Aside. In a separate large mixing bowl combine butter and sugar. Using an electric mixer on medium speed cream the butter and sugar together for 2 to 3 minutes, or until light fluffy.

Step 2

Add in the eggs and peppermint extract, mixing to combine. Scrape down the sides of the bowl as necessary. Slowly add in the dry ingredients, mixing on low speed just until combined. Do not over mix the batter.

Step 3

Transfer cake batter to the prepared jelly roll pan, smoothing it out with a spatula. Bake for 10 to 14 minutes, closer to 12 minutes. Cake is done when a tester inserted in the center comes out clean.
