CHRISTMAS COOKIE CUPCAKES
Sugary sweets and Christmas cookies are on everyone's baking list this time of year, so I thought why not make a Christmas cookie inspired cupcake?!
For the Cupcakes: Vanilla cake mix, vanilla instant pudding mix, egg, sour cream, vegetable or canolia oil, milk, vanilla extract For the Frosting: unsalted butter, sugar cookie mix, powdered sugar, milk, salt
Preheat oven to 350 degrees. Line a standard cupcake pan with cupcake liners. Set aside.
Combine cake mix and pudding mix in a large mixing bowl. Give the dry ingredients a quick whisk to mix them together. Add the eggs, sour cream, oil, milk & vanilla extract to the bowl. Use a handheld mixer or stand mixer to mix everything together on medium speed, just until the batter forms.
Scrape down the sides of the bowl as necessary to make sure the ingredients are well combined. Mix for another minute if necessary. Scoop batter into the prepared cupcake liners. Fill lines ⅔ of the way full. Bake cupcakes in the oven for 18-20 minutes.
Cupcakes are done when a tester inserted in the center comes out clean. Allow cupcakes to cool completely before frosting.
