COFFEE AND CHOCOLATE CAKE COOKIES
These Coffee and Chocolate Cake Cookies are inspired by the famous black and white cookies that are loved by so many. The cookie itself is a soft, cakey, vanilla flavored cookie topped with a rich chocolate and coffee glaze.
– All Purpose Flour – Baking Powder – Salt – Unsalted Butter – Granulated Sugar – Eggs – Vanilla extract – Almond extract – Milk
Preheat oven to 350 degrees. Line a baking sheet with parchment paper, set aside. In a large bowl combine the dry ingredients: flour, baking powder and salt. Give the ingredients a quick whisk to mix together, set bowl aside. In a separate, large bowl combine butter and sugar.
Cream together using a handheld mixer on medium speed, cream together until butter and sugar are light and fluffy (about 2 minutes). Scrap down the sides of the bowl, add in the eggs, vanilla and almond extract, continue to mix together until combined.
Add in half of the dry ingredients and half of the milk, mix together on low speed until just combined. Add in the remaining dry ingredients and the rest of the milk, mix together until the dough is formed.
Use a ¼ cup measuring cup to scoop out cookie dough and place on the cookie sheet. Cookies will spread so leave about 2 to 3 inches of room between each cookie. Bake for 14 to 15 minutes.
