PEPPERMINT GANACHE CUPCAKES

It's peppermint season! Chocolate and peppermint go hand in hand during the holiday season, and these Peppermint Ganache Cupcakes are a delicious holiday season indulgence.

– vanilla cake mix – vanilla instant pudding mix  – egg – sour cream – vegetable or canola oil – milk – vanilla extract – peppermint extract - semi sweet baker's chocolate  - heavy cream  - crushed peppermint candies for garnish

Ingredients

Step 1

Preheat oven to 350 degrees. Line a standard cupcake pan with cupcake liners. Set aside.

Combine cake mix and pudding mix in a large mixing bowl. Give the dry ingredients a quick whisk to mix them together. Add eggs, sour cream, oil, milk, vanilla & peppermint extract to the bowl.

Step 2

Use a handheld mixer or stand mixer, beat on medium speed until the batter forms. Scrape down the sides of the bowl as necessary. Continue mixing until batter is thoroughly combined.

Step 3

Scoop batter into the prepared liners, filling up the liners ⅔ of the way full. Bake in the oven for 18-20 minutes. Cupcakes are done when a tester inserted in the center comes out clean.
