PUMPKIN SCOTCHIES

– all purpose flour – baking soda – salt – pumpkin pie spice – ground cinnamon – unsalted butter – granulated sugar – dark brown sugar (light brown sugar can be used too) – eggs – vanilla extract – pumpkin puree (canned pumpkin) – old fashioned oats butterscotch chips

Step 1

In a bowl combine flour, baking soda, salt, pumpkin pie spice, and cinnamon. Whisk together to combine dry ingredients. In a separate, large bowl cream butter, sugar & brown sugar together until light and fluffy with an electric mixer on medium speed.

Step 2

Cover cookie dough with plastic wrap and chill cookie dough in the fridge for at least 2 hours or up to overnight.

Step 3

Preheat oven to 375 degrees. Scoop cookie dough unto a baking sheet lined with parchment paper or greased with cooking spray. Add extra butterscotch chips to the tops of the cookie dough balls if you'd like. Bake cookies for 11-12 minutes.
