PUMPKIN SPICE TIRAMISU
This tiramisu has the addition of pumpkin and pumpkin pie spice but still has a strong coffee flavor and a creamy mascarpone filling. This recipe is completely no-bake and is enough for a small crowd. It also gets better as it sets so it's a great recipe to make ahead of time!
– espresso or strong brewed coffee – ladyfingers – mascarpone – egg yolks – granulated sugar – heavy cream – canned pumpkin – pumpkin pie spice – vanilla extract
– Brew the coffee or espresso and pour it into a shallow bowl. Set the bowl aside to let the coffee cool.
– Add the egg yolks and sugar to a medium sized glass (heat safe) mixing bowl. Fill a saucepan about ⅓ of the way full with water. Place the sauce pan over low heat so that the water comes to a simmer.
– In a separate, large mixing bowl combine the heavy whipping cream, mascarpone, canned pumpkin, pumpkin pie spice and vanilla extract.
