STICKY TOFFEE PUDDING
Sticky toffee pudding is a decadent dessert that features a date-filled cake that light in texture that is drenched in a delicious, rich toffee sauce.

Line a 8x8 inch baking pan with parchment paper. Chop pitted dates and place them in a small bowl. Brew a cup of coffee and pour it over the dates. Let the dates soak for 10 minutes to soften. Preheat oven to 350 degrees.
Add flour, coffee granules, baking soda, baking powder, and salt to a bowl. Give the ingredients a quick whisk to combine. Set aside. In a separate large mixing bowl combine the butter and dark brown sugar, mixing on medium speed for 2 to 3 minutes.
Scrapes down the sides of the bowl, while mixing on low-medium speed, add the eggs in one at a time, mixing thoroughly between each one. Add in the vanilla extract and mix to combine.
Add about third of the dry ingredients and a third of the coffee/date mixture, mixing on low speed just until combined. Continue adding the dry ingredients with the coffee/date mixture until thoroughly combined. Pour the batter into the prepared baking dish. Bake for 25 to 30 minutes.
