Preheat oven to 350 degrees. For this recipe you can use a properly seasoned cast iron skillet or a 9x13 inch baking dish.
In a large bowl combine peeled and sliced apples, cornstarch, lemon juice, sugar, cinnamon, cloves and nutmeg. Stir ingredients together until apples are covered in sugar & spices. Pour apples into the cast iron skillet and spread them out evenly to cover the skillet.
To make the crumble, combine butter, brown sugar, flour, cinnamon and pecans into a medium sized bowl and mix together with a fork into the mixture forms crumbs. Be patient with this part, it may take a few minutes to get the butter incorporated into the dry ingredients. Sprinkle crumble over the apples, covering it evenly. You will have spot that are not completely covered, this is fine.
Place skillet in the oven and bake for 40-45 minutes until apples are bubbly and crumble is golden brown. Be careful when you remove this from the oven, it's piping hot!
While the apple crumble is in the oven you can make the salted caramel. To make the salted caramel; combine butter, brown sugars, heavy cream, vanilla & salt in a medium sized sauce pan over medium heat. Stir the ingredients together until butter is completely melted and ingredients are combined and smooth. Allow the sauce to come to a boil for about a minute or so, stirring frequently to avoid burning. Turn the heat down to low and let the sauce simmer for about 5 minutes, still stirring to avoid burning. Remove the sauce pan from heat and pour caramel into a heat safe bowl or container.
After the apple crumble has had time to cool, about 15 to 20 minutes, drizzle the salted caramel over the entire crumble. This dessert is best served warm with a scoop of vanilla ice cream!
